A quick, one-pan weeknight dinner featuring juicy chicken thighs in a sticky, sweet, salty, and spicy gochujang sauce. Ready in 25 minutes with customizable heat levels.

- 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
- 2 tablespoons neutral oil (vegetable or canola)
- 4 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 3 tablespoons gochujang paste
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 2 tablespoons water
- 1 tablespoon toasted sesame seeds
- 2 stalks green onions, sliced
Instructions
- Pat chicken thighs dry with paper towels and cut into 1-inch chunks.
- Heat oil in a large non-stick skillet over medium-high heat.
- Add chicken in a single layer and sear undisturbed for 3-4 minutes until golden brown. Flip and cook another 3-4 minutes until cooked through. Remove chicken and set aside.
- Reduce heat to medium. Add garlic and ginger to the same pan and sauté for 30-60 seconds until fragrant.
- Whisk gochujang, soy sauce, honey, rice vinegar, and water in a small bowl until smooth.
- Pour sauce into the skillet with garlic and ginger. Stir to scrape up browned bits and simmer for 1-2 minutes until slightly thickened.
- Return chicken to the skillet and toss to coat evenly. Simmer for 2-3 minutes until sauce is glossy and clings to the chicken.
- Remove from heat and garnish with toasted sesame seeds and sliced green onions.
- Serve immediately over steamed jasmine rice or cauliflower rice.
Notes
Pat chicken dry for a better sear. Use medium-high heat to prevent burning the honey. Toast sesame seeds for better flavor. Sauce can be adjusted for spice level by varying gochujang amount. Leftovers keep in fridge for up to 4 days; reheat gently with a splash of water.
