  • Pinch of salt (for frosting)
  • Optional: Sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 6-inch round cake pan and line the bottom with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  3. Add the softened butter and granulated sugar to the dry ingredients. Mix until it resembles wet sand.
  4. Add eggs one at a time, whisking well after each addition until combined.
  5. Pour in the vanilla (extract or paste) and milk. Whisk until the batter is smooth and glossy.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then turn it out onto a cooling rack to cool completely.
  9. While the cake cools, make the frosting: Beat softened butter until creamy. Add powdered sugar one cup at a time, then add vanilla, salt, and 1 tablespoon of cream. Beat until fluffy.
  10. Spread the buttercream over the cooled cake and add sprinkles if desired.

Notes

Ensure ingredients are at room temperature for best results. Do not overmix the batter to avoid a tough texture. If using vanilla bean paste, it may need to be thinned slightly with milk. The cake can be stored at room temperature for up to 2 days or frozen for up to 3 months.
