  • 1 cup (200g) dark brown sugar, packed
  • 1/2 cup (100g) white sugar
  • 1 cup (240ml) heavy cream, room temperature
  • 1/2 cup (120g) 100% pure pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon kosher salt
  • 2 tablespoons water

Instructions

  1. Prep ingredients: Measure out cream, pumpkin puree, spices, and vanilla. Have everything ready in small bowls.
  2. Melt butter and sugars: Place a medium saucepan over medium heat. Add butter and melt. Add brown sugar and white sugar, stirring constantly with a whisk until dissolved into a thick, bubbling paste.
  3. Cook the caramel: Continue stirring constantly until the mixture turns a deep golden-brown (copper penny color) and smells nutty, about 2-3 minutes. Do not let it smoke.
  4. Add cream: Remove the pan from heat. Slowly pour in the heavy cream while whisking vigorously. The mixture will bubble up; keep whisking until smooth.
  5. Return to heat and thicken: Place the pan back on medium-low heat. Add pumpkin puree and whisk until incorporated. Simmer for 3-4 minutes until the syrup coats the back of a spoon.
  6. Season and finish: Remove from heat. Stir in vanilla extract, pumpkin pie spice, and salt. Taste and adjust if necessary.
  7. Cool and store: Let the syrup cool in the pan for 10 minutes. Pour into a heatproof jar or bottle. Store in the refrigerator for up to 2 weeks.

Notes

Use room temperature cream to prevent the caramel from seizing. If the syrup becomes too thick in the fridge, microwave for 15 seconds or stir in warm water. For a smoother texture, strain through a fine-mesh sieve before bottling. Ensure pumpkin puree is 100% pure, not pie filling.
