  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups marinara sauce (low sugar)
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pound chicken breasts to an even ½-inch thickness. Season generously with salt and pepper.
  3. In a shallow bowl, whisk eggs with salt, pepper, and a splash of milk or water.
  4. In a second bowl, mix almond flour, gluten-free panko, garlic powder, onion powder, and Italian seasoning.
  5. Dip chicken in egg mixture, then press firmly into breadcrumb mixture to coat evenly. Place on baking sheet.
  6. Drizzle tops lightly with olive oil. Bake for 20 minutes until breading is golden and crispy.
  7. While chicken bakes, warm marinara sauce in a saucepan.
  8. Remove chicken from oven. Spoon about ¼ cup warm marinara over each breast.
  9. Sprinkle with mozzarella and Parmesan cheese.
  10. Return to oven and bake for 5-7 minutes until cheese is bubbly and melted.
  11. Let rest for 3-5 minutes before serving.
