  • 1 large wedge Parmesan cheese (about 8 oz / 225g)
  • 2 boxes crackers (approx. 16 oz total, such as water crackers or wheat thins)
  • 1 bag nuts (approx. 8 oz / 225g, walnuts or almonds)
  • 1 head fresh garlic
  • 1 small bottle extra virgin olive oil
  • Dried rosemary or thyme
  • 1 pint grapes or berries
  • 1 jar marinated olives (approx. 6 oz)
  • 1 small jar mustard (whole grain or dijon)

Instructions

  1. Preheat oven to 400°F (200°C). Cut the top off a head of garlic, drizzle with olive oil, wrap in foil, and bake for 30-40 minutes until soft. Let cool.
  2. Mince two cloves of fresh garlic as finely as possible.
  3. Slice or chunk the Parmesan cheese. Arrange in clusters on the board.
  4. Toast nuts in a dry pan over medium heat for 2-3 minutes until fragrant.
  5. Place crackers in a pile or fanned out on one side of the board.
  6. Sprinkle toasted nuts around the cheese and crackers.
  7. Squeeze roasted garlic cloves from skins into a small bowl. Mash into a paste with a fork, mixing in a teaspoon of olive oil and a pinch of salt.
  8. Dollop the garlic paste into a small ramekin or directly onto the board.
  9. Fill empty spaces with grapes or berries and tuck olives near the cheese.
  10. Add a dollop of mustard in a small dish.
  11. Sprinkle minced fresh garlic over the cheese and crackers.
  12. Drizzle olive oil over the garlic paste and nuts.
  13. Garnish with dried rosemary or thyme sprigs.

Notes

For best results, assemble the board 2 hours before serving. Add fresh minced garlic and olive oil drizzle right before guests arrive to prevent crackers from getting soggy. Leftovers can be stored in the fridge; cheese lasts weeks, garlic paste lasts 3 days.
