  • 12 tablespoons pure maple syrup
  • ½ teaspoon vanilla extract
  • Ice (as needed for serving)

Instructions

  1. Combine 1 cup of coarse coffee grounds and 4 cups of cold filtered water in a large pitcher or jar. Stir gently to ensure all grounds are submerged.
  2. Cover the container and place it in the refrigerator to steep for 12-24 hours (18-24 hours is ideal for a smooth, low-acid concentrate).
  3. Strain the coffee mixture through a fine-mesh sieve or paper coffee filter into a clean bowl or pitcher. Do not squeeze the grounds to avoid bitterness.
  4. In a small mixing bowl, whisk together the heavy cream, pumpkin puree, pumpkin pie spice, maple syrup, and vanilla extract until smooth and slightly thickened.
  5. Divide the cold brew concentrate evenly among 4 glass bottles or jars, filling each about halfway. Seal and store in the fridge for up to 4 days.
  6. To serve, fill a bottle with ice, pour the cold brew concentrate over the ice, and top with a generous dollop of the pumpkin cream. Stir or sip as desired.

Notes

Use coarse ground coffee to prevent bitterness. Store the coffee base and pumpkin cream separately until ready to drink to maintain texture. For dairy-free options, use oat milk or coconut cream for the topping. The coffee base can be stored for up to 5 days, while the pumpkin cream lasts up to 3 days.
