  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 3 tablespoons granulated sugar
  • 1 tsp cornstarch + 1 tbsp water (for slurry)
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, sliced thinly

Instructions

  1. Cut chicken thighs into 1.5-inch bite-sized pieces. Pat dry with paper towels and season with salt and white pepper.
  2. Whisk egg white until frothy, toss chicken in it, then gradually add cornstarch to create a light, sandy coating.
  3. Heat 2-3 inches of vegetable oil in a deep skillet or wok to 350°F (175°C).
  4. Fry chicken in batches for 3-4 minutes until golden brown and cooked through (165°F). Remove and drain on a wire rack.
  5. Increase oil temperature to 375°F (190°C) and fry chicken again for 1-2 minutes to double-fry for extra crispiness. Drain again.
  6. In a medium saucepan, combine orange juice, orange zest, soy sauce, rice vinegar, sugar, garlic, and ginger. Simmer for 2-3 minutes.
  7. Whisk cornstarch slurry and stir into the simmering sauce. Cook for 1 minute until glossy and thickened.
  8. Toss fried chicken in the sauce to coat. Serve immediately garnished with sesame seeds and green onions.
