Description

A rich, coffee-soaked, creamy no-bake dessert that is easier than you think and better than takeout. This classic Italian tiramisu features espresso-soaked ladyfingers and a light mascarpone cream.


Ingredients

  • 16 oz (450g) Mascarpone Cheese, cold
  • 1 cup (240ml) Heavy Cream, full-fat, cold
  • 4 large Egg Yolks
  • ½ cup (100g) Granulated Sugar
  • 1 cup (240ml) Espresso Coffee, cooled completely
  • 2430 pieces Italian-style Ladyfingers (Savoiardi)
  • Unsweetened Cocoa Powder, for dusting
  • 23 tablespoons Marsala Wine (optional)

Instructions

  1. Brew 1 cup of strong espresso and let it cool completely. If using, stir in Marsala wine.
  2. In a large, cold bowl, whip the heavy cream to stiff peaks using a hand or stand mixer. Set aside in the fridge.
  3. In a separate bowl, beat the egg yolks and sugar together on medium-high speed for 3-4 minutes until pale, thick, and fluffy.
  4. Add the cold mascarpone to the egg yolk mixture and beat on low speed just until combined. Gently fold in the whipped cream until no white streaks remain.
  5. Quickly dip each ladyfinger into the cooled espresso (about 1 second per side) and lay them in a single layer in the bottom of a 9×13 inch dish.
  6. Spread half of the cream mixture over the first layer of ladyfingers.
  7. Add a second layer of dipped ladyfingers, then spread the remaining cream on top, smoothing it evenly.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, ideally overnight.
  9. Before serving, dust the top generously with unsweetened cocoa powder and slice with a sharp knife.

Notes

Keep all ingredients cold to ensure the cream whips properly and the mascarpone doesn’t seize. Do not over-dip the ladyfingers or they will turn to mush. The dessert improves with age; let it chill overnight for the best texture and flavor. Do not freeze, as the cream will separate.
