These chewy brown butter chocolate chip cookies are naturally gluten-free, featuring crisp edges, a gooey center, and deep nutty flavor from browning the butter. They are easy to make, customizable, and stay soft for days.
Ingredients
- 1 cup (226g) unsalted butter
- ¾ cup (150g) granulated sugar
- 1 cup (200g) light brown sugar, packed
- 2 large eggs, room temperature
- 2 teaspoons vanilla extract
- 2 cups (250g) gluten-free 1:1 baking flour (with xanthan gum)
- 1 teaspoon baking soda
- 1 teaspoon fine sea salt
- 1 ½ cups (250g) dark chocolate chips
- Flaky sea salt (for topping)
- Optional: ½ cup toasted pecans or walnuts
Instructions
- Melt butter in a medium saucepan over medium heat, stirring constantly until it foams, subsides, and develops brown specks and a nutty aroma (5-7 minutes). Pour into a heat-proof bowl and cool for 10 minutes.
- In a large bowl, whisk the cooled brown butter, granulated sugar, and brown sugar until smooth and slightly fluffy.
- Whisk in the eggs one at a time, then add the vanilla extract. Mix until just combined.
- In a separate medium bowl, whisk the gluten-free flour, baking soda, and fine sea salt.
- Gently fold the dry ingredients into the wet mixture until no dry streaks remain.
- Stir in the chocolate chips and optional nuts.
- Chill the dough in the refrigerator for at least 30 minutes (or up to 24 hours).
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Scoop dough balls (about 2 tablespoons each) onto the baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes until edges are golden but centers look slightly soft.
- Immediately sprinkle with flaky sea salt upon removing from the oven.
- Let cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
