Description

  • 2 cups (160g) old-fashioned rolled oats
  • 1 cup (240ml) milk (dairy or unsweetened almond milk)
  • 2 large eggs
  • ½ cup (120g) unsweetened applesauce
  • 1 large Granny Smith apple, finely diced or grated (about 1 cup)
  • 3 tablespoons (40g) brown sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • Non-stick cooking spray or melted butter/coconut oil for greasing

Instructions

  1. Preheat oven to 350°F (175°C). Generously spray a 12-cup muffin tin with non-stick cooking spray.
  2. In a large mixing bowl, whisk together the milk, eggs, applesauce, brown sugar, cinnamon, nutmeg, and salt until smooth and sugar is mostly dissolved.
  3. Add the rolled oats and finely diced/grated apples to the wet mixture. Stir well to coat the oats.
  4. Let the mixture sit for 5 minutes to allow the oats to absorb some liquid.
  5. Divide the mixture evenly among the 12 muffin cups, filling them about ¾ full. Press down gently with the back of a spoon to flatten the tops.
  6. Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  7. Let the cups cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before storing.
  8. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.

Notes

Do not use instant oatmeal packets or steel-cut oats; old-fashioned rolled oats are required for the correct texture. Letting the oats soak for 5 minutes is crucial to prevent a crunchy texture. For a crumble topping, mix 1 tbsp flour, 1 tbsp cold butter, and a pinch of cinnamon before baking. To make dairy-free, use almond/oat milk and coconut oil. To make egg-free, use 2 flax eggs (2 tbsp ground flaxseed + 5 tbsp water).
