Ingredients
- 3–4 pounds bone-in, skin-on chicken thighs
- 3 tablespoons extra virgin olive oil
- 6–8 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper, freshly cracked
- 1 lemon, sliced (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
- Pat the chicken thighs completely dry with paper towels to ensure crispy skin.
- In a small bowl, mix the olive oil, minced garlic, oregano, thyme, smoked paprika, salt, and pepper to form a paste.
- Place chicken thighs on the prepared baking sheet. Rub the herb mixture all over the chicken, getting under the skin if possible.
