Ingredients

  • 4 cups seedless watermelon, cubed (600g)
  • 1 cup fresh mint leaves, packed (about 30g)
  • 34 limes, juiced (about ½ cup / 120ml)
  • 12 tablespoons simple syrup or honey (optional)
  • Ice, for serving
  • Extra mint sprigs, for garnish
  • Lime wheels, for garnish

Instructions

  1. Prep the watermelon by cutting it in half, scooping out the flesh, and chopping it into chunks. Aim for roughly 4 cups of cubed watermelon, removing any seeds.
  2. Place the watermelon chunks into a blender. Pulse a few times to break it down, then blend on high speed for 30-60 seconds until completely smooth with no chunks or pulp.
  3. Place a fine-mesh strainer over a large bowl or serving pitcher. Pour the blended watermelon into the strainer and use a spoon to press down on the pulp to extract as much liquid as possible.
  4. Tear the fresh mint leaves roughly and toss them into the strained watermelon juice. Add the fresh lime juice and sweetener (if using). Stir well to combine.
  5. Taste and adjust the flavor. Add more lime if it’s too sweet, or more sweetener/watermelon if it’s too tart. For stronger mint flavor, let the mixture sit for 10 minutes.
  6. Fill glasses with ice. Pour the agua fresca over the ice and garnish with a sprig of mint and a lime wheel. Serve immediately.

Notes

For a colder drink without dilution, freeze the watermelon chunks the night before. Always use fresh lime juice for the best flavor. The drink is best served fresh but can be stored in the fridge for up to 24 hours. Add mint just before serving to prevent bitterness.
