  • 2 medium yellow onions, thinly sliced (about 400g)
  • 68 slices thick-cut bacon (about 150g), chopped
  • 1 cup full-fat sour cream (240g)
  • 3 cloves garlic, minced
  • 2 tablespoons brown sugar
  • 1 teaspoon balsamic vinegar
  • Salt and black pepper to taste
  • 46 large pita breads (about 300g), cut into triangles
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika (smoked or regular)
  • Optional: Chopped chives for garnish
  • Optional: Shredded cheddar or Gruyère cheese
  • Optional: Jalapeños for heat

Instructions

  1. Slice onions thinly. Cook bacon in a large skillet over medium heat until crispy. Remove bacon and set aside, leaving 1 tablespoon of bacon fat in the pan.
  2. Add sliced onions to the skillet with the bacon fat. Increase heat to medium-high and cook for 2 minutes, stirring occasionally.
  3. Sprinkle brown sugar over the onions. Cook for another 3-5 minutes, stirring frequently, until soft and golden brown. Deglaze the pan with balsamic vinegar, scraping up browned bits.
  4. In a small bowl, mix sour cream, minced garlic, salt, and black pepper.
  5. Return caramelized onions to the skillet. Lower heat to low and gradually stir in the sour cream mixture. Add the crispy bacon back in.
  6. Heat gently for 1-2 minutes until warm and bubbly. Do not boil.
  7. For pita chips: Toss pita triangles with olive oil, garlic powder, and paprika. Bake at 375°F (190°C) for 5-7 minutes or fry in a skillet until golden and crispy.
  8. Serve the warm dip immediately with the crispy pita chips. Garnish with chives if desired.

Notes

Use thick-cut bacon for better texture. Ensure sour cream is at room temperature to prevent curdling. If the dip is too watery, cook onions longer to release moisture. Do not boil the dip after adding sour cream.
