Description

  • 2 teaspoons active dry yeast
  • 2 tablespoons granulated sugar
  • 3 tablespoons neutral oil (avocado or light olive)
  • 2 ½ to 3 cups all-purpose flour
  • 1 teaspoon salt
  • ½ cup softened vegan butter
  • ½ cup pure maple syrup
  • 2 tablespoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup raw cashews (soaked in hot water)
  • 34 tablespoons maple syrup (for glaze)
  • 1 teaspoon vanilla extract
  • Pinch of salt (for glaze)

Instructions

  1. In a small bowl, mix warm plant-based milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. In a large bowl, combine flour and salt. Add yeast mixture and oil. Mix until a shaggy dough forms.
  3. Knead the dough for 10 minutes until smooth and elastic, passing the windowpane test. Add more flour if too sticky.
  4. Place dough in an oiled bowl, cover with cling wrap, and let rise in a warm spot for 1-2 hours until doubled.
  5. Punch down dough and roll into a 12×16 inch rectangle. Spread softened vegan butter over the surface.
  6. Sprinkle with maple syrup, cinnamon, and nutmeg. Roll tightly into a log and cut into 12 equal pieces.
  7. Place rolls in a greased 9×13 inch baking pan. Cover and let rise again for 30-45 minutes until puffy.
  8. Preheat oven to 350°F (175°C). Bake rolls for 25-30 minutes until golden brown.
  9. While rolls bake, soak cashews in hot water for 20 minutes. Drain and blend with maple syrup, vanilla, and salt until smooth.
  10. Let rolls cool for 10 minutes, then drizzle with cashew glaze. Serve warm.

Notes

Ensure milk is warm, not hot, to avoid killing yeast. Soaking cashews is essential for a creamy glaze. Rolls can be made ahead by refrigerating dough after first rise. Store leftovers in an airtight container for up to 3 days or freeze baked rolls (without glaze) for up to 1 month.
