Description

Fudgy, dense, and impossibly moist vegan brownies made with just a few simple ingredients. The avocado provides moisture and richness without affecting the chocolate flavor, making these a kid-approved, dairy-free, and egg-free dessert.


Ingredients

  • 2 medium ripe avocados (about 400g flesh)
  • ½ cup (50g) unsweetened cocoa powder
  • 1 cup (200g) granulated sugar
  • ¼ cup (60ml) vegetable oil or melted coconut oil
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt
  • ½ cup (60g) all-purpose flour
  • ½ cup (85g) dairy-free dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides, and lightly grease the parchment.
  2. Pit and peel the avocados. Place the flesh into a food processor or blender and pulse until completely smooth and creamy, with no green chunks remaining.
  3. With the processor running, slowly add the sugar, oil, vanilla extract, and salt. Blend until the mixture is smooth and resembles a thick, dark chocolate paste. Scrape down the sides as needed.
  4. Add the flour and cocoa powder to the food processor. Pulse just until combined and no white streaks of flour remain. Do not overmix.
  5. Pour the batter into the prepared baking pan. Sprinkle the dark chocolate chips over the top and gently fold them in with a spatula, distributing them evenly.
  6. Bake for 25-30 minutes. The brownies are done when a toothpick inserted into the center comes out with a few moist crumbs attached, but not wet batter.
  7. Let the brownies cool in the pan for at least 30 minutes to allow them to set. Lift out using the parchment paper and slice into squares.

Notes

Ensure avocados are very ripe and soft for a smooth puree. Do not overmix the batter once flour is added to maintain a fudgy texture rather than a cakey one. Brownies must cool completely before cutting to prevent crumbling. Store in an airtight container at room temperature for up to 3 days, or in the fridge for up to 5 days. They can also be frozen for up to 3 months.
