Ingredients

  • 2 medium ripe avocados (about 1 cup flesh / 200g)
  • ½ cup unsweetened cocoa powder (50g)
  • ¼ to ½ cup maple syrup (60-120ml)
  • 1 teaspoon vanilla extract
  • ½ cup dark chocolate chips or chunks (85g)
  • 23 tablespoons almond milk or oat milk (30-45ml)
  • 1 pinch flaky sea salt
  • Optional: ½ teaspoon espresso powder
  • Optional: 1 tablespoon chia seeds
  • Optional: Fresh berries or mint for garnish

Instructions

  1. Cut avocados in half, remove pits, and scoop flesh into a bowl. Scrape off any brown spots and mash slightly with a fork.
  2. Microwave chocolate chips in a microwave-safe bowl for 30 seconds, stir, and continue in 15-second bursts until melted and smooth. Let cool for a minute until warm but not hot.
  3. Add mashed avocado, cocoa powder, maple syrup, vanilla extract, and a pinch of salt to a high-speed blender.
  4. Blend on low, then increase to high, blending for 1-2 minutes until the mixture is completely smooth and pale. Add almond milk one tablespoon at a time if the mixture is too thick.
  5. Pour the warm melted chocolate into the blender and pulse a few times to incorporate, creating a marbled effect.
  6. Scoop the mousse into serving bowls or glasses.
  7. Refrigerate for at least 30 minutes to firm up and intensify flavor (optional but recommended).
  8. Garnish with flaky sea salt, fresh berries, or mint before serving.

Notes

Ensure avocados are very ripe (dark green to black and soft) for the smoothest texture. Do not freeze the mousse as the texture will become grainy upon thawing. Store leftovers in an airtight container in the fridge for up to 4 days. Press plastic wrap directly onto the surface to prevent oxidation.
