A silky, rich, and shockingly chocolatey vegan dessert made in just five minutes. This healthy hack uses ripe avocados, cocoa powder, and maple syrup to create a creamy, dairy-free mousse that tastes indulgent without the guilt.


Ingredients

  • 2 medium ripe Hass avocados (about 1 cup flesh / 230g)
  • 1/3 cup (30g) unsweetened natural cocoa powder
  • 34 tablespoons (45-60ml) maple syrup
  • 1 teaspoon pure vanilla extract
  • 23 tablespoons (30-45ml) almond milk or oat milk
  • 1/4 teaspoon salt
  • 1/2 teaspoon instant espresso powder (optional)
  • Sea salt flakes, whipped coconut cream, or dark chocolate shavings for garnish (optional)

Instructions

  1. Wash avocados, cut in half, remove pits, and scoop out the flesh. Ensure the flesh is bright green with no brown streaks.
  2. Add the avocado flesh, cocoa powder, maple syrup, vanilla extract, salt, and espresso powder (if using) to a food processor or high-speed blender.
  3. Pour in 2 tablespoons of plant-based milk.
  4. Pulse a few times to break up the avocado, then blend continuously for 3-5 minutes. Scrape down the sides with a spatula after 2 minutes. If the mixture is too thick, add the remaining 1 tablespoon of milk.
  5. Blend until the mixture is completely smooth, thick, and resembles chocolate pudding with no visible specks of avocado.
  6. Taste and adjust sweetness or salt if needed.
  7. Transfer to serving bowls or glasses and refrigerate for at least 30 minutes to allow flavors to meld and texture to firm up.
  8. Top with garnishes such as sea salt flakes, chocolate shavings, or coconut cream and serve immediately.

Notes

Use cold avocados for a thicker, more stable mousse. Do not freeze this mousse as the texture may become grainy upon thawing. Store in an airtight container in the fridge for up to 3-4 days. Press plastic wrap directly onto the surface to prevent browning.
