Description
Crispy, spicy, and tangy vegan buffalo cauliflower bites that are perfect for tailgating. This easy, budget-friendly recipe uses simple pantry ingredients to create a crowd-pleasing snack that tastes better than traditional wings.
Ingredients
- 2 large heads cauliflower (about 1.5kg)
- 1 cup all-purpose flour (120g)
- 1 cup cold sparkling water or seltzer (240ml)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- Splash of oat milk or non-dairy milk
- ½ cup hot sauce (e.g., Frank’s RedHot)
- 2 tablespoons vegan butter (melted)
- 1 tablespoon apple cider vinegar
- Optional: Vegan ranch or blue cheese dressing for serving
Instructions
- Preheat oven to 425°F (218°C). Line two large baking sheets with parchment paper.
- Wash cauliflower heads and pat them completely dry. Cut into bite-sized florets (about 1.5 inches wide). Squeeze out excess moisture with a towel to ensure crispiness.
- In a large bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- In a separate bowl, combine cold sparkling water and a splash of oat milk. Whisk wet ingredients into dry ingredients until a smooth, pancake-like batter forms.
- Working in batches, dip cauliflower florets into the batter, ensuring full coverage. Let excess drip off and place on prepared baking sheets, leaving space between pieces.
- Bake for 25-30 minutes, flipping halfway through, until edges are golden brown and crispy. Alternatively, air fry at 375°F for 15-18 minutes, shaking basket halfway.
- While cauliflower bakes, melt vegan butter in a small saucepan or microwave. Whisk in hot sauce and apple cider vinegar to make the buffalo sauce.
- Remove hot cauliflower from oven and immediately toss in the buffalo sauce using tongs. Return to baking sheet for 2-3 minutes to let sauce set.
- Serve immediately with vegan ranch or blue cheese dressing.
Notes
Ensure cauliflower is completely dry before battering to prevent sogginess. Do not overcrowd the baking sheet; cook in batches if necessary. Toss cauliflower in sauce while still hot for best adherence. For air fryer, cook at 375°F for 15-18 minutes. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in an air fryer or oven to restore crispiness.
