Sunbutter Jelly Pinwheel Roll-Ups: 3-Ingredient Easy Lunch

  • Author: Olivia
  • Total Time: 15 minutes
  • Yield: 4-6 servings

Description

A quick, nut-free, and kid-approved lunch option made with just three ingredients: flour tortillas, creamy sunflower seed butter, and grape jelly. These roll-ups are perfect for back-to-school mornings and can be made ahead for easy storage.

Ingredients

  • Large flour tortillas (10-inch)
  • Creamy sunflower seed butter (Sunbutter)
  • Grape jelly
  • Plastic wrap or aluminum foil (for wrapping)
  • Optional: Mini chocolate chips, sprinkles, or honey/maple syrup

Instructions

  1. Prep workspace: Lay out a clean cutting board and have tortillas, sunbutter, jelly, and plastic wrap ready.
  2. Flatten tortillas: Gently roll over tortillas with a rolling pin or hands to make them pliable and thinner.
  3. Spread sunbutter: Spread a thin, even layer of creamy sunbutter over the entire tortilla, leaving a half-inch border around the edge.
  4. Add jelly: Squeeze a line of grape jelly down the center or spread a thin layer over the sunbutter. Add optional toppings like chocolate chips or sprinkles.
  5. Roll it up: Starting from the edge closest to you, roll the tortilla tightly into a cylinder. Press the seam closed.
  6. Wrap and chill: Wrap each roll tightly in plastic wrap, twisting the ends like a candy wrapper. Chill in the fridge for at least 30 minutes to firm up.
  7. Slice and serve: Use a sharp knife to slice the chilled rolls into 1-inch thick pinwheels. Serve cold or at room temperature.

Notes

Chilling the rolls for at least 30 minutes is crucial to prevent tearing and unraveling when slicing. Use creamy sunbutter for easier rolling. If using crunchy sunbutter, spread it very thinly. For nut-free schools, ensure all ingredients are certified nut-free. Store in the fridge for up to 3 days or freezer for up to 1 month.
