  • 2 tablespoons (30g) unsalted butter
  • ½ teaspoon flaky sea salt
  • 1 teaspoon pure vanilla extract
  • Optional: ¼ cup crushed almonds, ¼ cup chopped pistachios, or ½ teaspoon espresso powder

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly spray with cooking spray.
  2. Chop the dark chocolate into small, pea-sized chunks and place them in a microwave-safe bowl.
  3. Melt the chocolate in the microwave in 30-second intervals, stirring well after each interval, until almost fully melted. Stir until completely smooth. Alternatively, melt gently over a double boiler on the stovetop.
  4. Add the almond butter and butter to the melted chocolate. Stir vigorously until the mixture is smooth and glossy. If too stiff, microwave for an additional 10 seconds.
  5. Stir in the powdered sweetener, vanilla extract, and sea salt. Taste and adjust sweetness or salt if desired.
  6. Pour the mixture into the prepared pan and spread evenly. Sprinkle with optional add-ins like nuts or extra sea salt.
  7. Chill in the freezer for 30 minutes or in the refrigerator for 2 hours until firm.
  8. Lift the fudge out of the pan using the parchment overhang. Cut into squares using a sharp knife, wiping the knife between cuts for clean edges.
  9. Serve chilled or at room temperature.
