Description

A vibrant, tart, and sweet alcohol-free summer drink made with fresh blackberries, mint, lemon juice, and sparkling water. It is ready in under 10 minutes and perfect for parties or hot days.


Ingredients

  • 2 cups fresh blackberries (300g)
  • 1 large handful fresh mint leaves (about 20 leaves)
  • 1/2 cup freshly squeezed lemon juice (120ml)
  • 24 tablespoons honey or simple syrup (30-60ml)
  • 2 cups club soda or sparkling water (480ml)
  • Ice cubes
  • Optional garnishes: extra mint sprigs, lemon wheels, whole blackberries

Instructions

  1. Wash and pat dry the blackberries. Place them in a large bowl or pitcher bottom along with the fresh mint leaves.
  2. Gently muddle the blackberries and mint together until the berries break down and release their juices, creating a purple puree with specks of green. Avoid pulverizing the mint to prevent bitterness.
  3. Squeeze the fresh lemon juice into the berry mixture and add the honey or simple syrup.
  4. Stir thoroughly to combine. Taste and adjust sweetness or tartness by adding more honey or lemon juice as needed.
  5. Fill highball glasses with ice cubes.
  6. Spoon a generous amount (1/4 to 1/2 cup) of the blackberry-mint mash into the bottom of each glass.
  7. Top with cold club soda or sparkling water, pouring gently to preserve carbonation.
  8. Stir gently to combine flavors.
  9. Garnish with a sprig of mint, a lemon wheel, and/or extra blackberries.
  10. Serve immediately while cold and fizzy.

Notes

For a smoother drink, simmer blackberries with water and sugar to make a syrup and strain out solids. The blackberry-mint mash can be stored in an airtight container in the fridge for up to 3 days. Do not store the mixed drink with soda water as it will go flat. Use ripe berries for best flavor and keep soda water cold to maintain fizz.
