  • 8 oz cream cheese, softened
  • 1/2 cup whole milk
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and black pepper to taste

Instructions

  1. Prep ingredients: Dice the onion, mince the garlic, and shred the cheeses. Soften the cream cheese by leaving it on the counter for 15 minutes.
  2. Brown the chorizo: Heat a large skillet over medium heat. Add the chorizo and break it up with a wooden spoon. Cook for 5-7 minutes until browned and fat has rendered. Drain most of the fat, leaving about 2 tablespoons.
  3. Sauté aromatics: Add the diced onion to the pan and cook for 2-3 minutes until softened. Add the garlic and cook for 1 minute until fragrant.
  4. Toast spices: Stir in the cumin and chili powder. Cook for 30 seconds to toast the spices.
  5. Melt the cheese: Reduce heat to low. Gradually add the shredded cheddar and Monterey Jack, stirring constantly until melted. Add the softened cream cheese in cubes and stir until fully melted and smooth.
  6. Add liquid and season: Pour in the whole milk and stir well. Add salt and black pepper to taste. Adjust consistency with more milk if too thick, or simmer briefly if too thin.
