Description
A quick, one-bowl chocolate chip cookie baked in a small skillet, offering crispy edges and a soft, gooey center in just 15 minutes.
Ingredients
Scale
- 2 tablespoons unsalted butter, softened
- 2 tablespoons granulated sugar
- 2 tablespoons packed brown sugar
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1/8 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup chocolate chips (semi-sweet or milk)
- Optional: Sea salt flakes, extra chocolate chips, or ice cream for serving
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 6-inch cast-iron skillet if desired.
- In a mixing bowl, combine softened butter, granulated sugar, and brown sugar. Mash and mix with a fork or spoon until the mixture resembles wet sand and is slightly fluffy.
- Add the egg yolk and vanilla extract to the butter mixture. Stir until fully combined and smooth.
- Add the flour, baking powder, and salt. Stir gently until just combined to form a dough ball. Do not overmix.
- Fold in the chocolate chips, reserving a few for the top. Press the dough evenly into the skillet, smoothing the top to about 1/2 inch thickness.
- Press reserved chocolate chips onto the top of the dough.
- Bake for 10 minutes, or until edges are golden brown and the center looks set but still soft.
- Let cool in the skillet for 5 minutes before serving warm.
Notes
Ensure butter is softened but not melted. Do not overmix the dough once flour is added to prevent toughness. For a chewier texture, use more brown sugar than white sugar. Can be made gluten-free with a 1:1 flour blend or dairy-free with vegan butter and chips.
