Description

  • 34 pounds Chuck Roast
  • 1 packet (1 ounce) Ranch Dressing Mix (dry)
  • 1 packet (1 ounce) Au Jus Gravy Mix (dry)
  • 1/2 cup (1 stick) Butter
  • 1012 Pepperoncini Peppers
  • 1/4 cup Pepperoncini Brine
  • 1/2 cup Beef Broth (low-sodium recommended)
  • Optional: Whole Potatoes (quartered)
  • Optional: Carrots (chopped)

Instructions

  1. Rinse the chuck roast under cold water and pat dry. Leave whole or cut into large chunks if necessary to fit the slow cooker.
  2. Place the roast in the bottom of the slow cooker.
  3. Sprinkle the ranch dressing mix evenly over the top of the roast.
  4. Sprinkle the au jus gravy mix over the ranch mix.
  5. Cut the butter into pats and lay them over the roast.
  6. Place the pepperoncini peppers on top of the roast.
  7. Pour the pepperoncini brine over the ingredients.
  8. Pour the beef broth around the sides of the slow cooker.
  9. If adding potatoes or carrots, tuck them in around the roast now.
  10. Cover and cook on LOW for 8-10 hours (or HIGH for 4-6 hours).
  11. Remove the meat from the slow cooker and shred it using two forks.
  12. Optional: If the sauce is too thin, mix 1 tablespoon cornstarch with 1 tablespoon cold water and stir into the liquid; cook on HIGH for 15-20 minutes to thicken.
  13. Return the shredded meat to the slow cooker and toss with the sauce. Serve immediately.

Notes

Do not skip the butter as it creates a rich, silky sauce. Use low-sodium broth to control salt levels since the seasoning packets are salty. If adding vegetables, add them in the last 4 hours of cooking to prevent them from becoming mushy. The meat should be fork-tender; if not, cook for an additional 1-2 hours.
