  • 23 tablespoons honey or maple syrup
  • 1 cup (150g) berries (fresh or frozen)
  • A tiny pinch of salt
  • Optional: 1/4 cup vanilla Greek yogurt
  • Optional: 2 tablespoons chopped nuts

Instructions

  1. In a mixing bowl, combine milk, vanilla extract, cinnamon, honey, and salt. Whisk well until honey is fully dissolved.
  2. Stir in chia seeds gradually while whisking continuously for about 30 seconds to prevent clumping.
  3. Let the mixture sit for 10 minutes, then whisk again to break up any remaining clumps.
  4. Pour the mixture into airtight containers, leaving space at the top for expansion.
  5. Cover tightly and refrigerate for at least 4 hours, preferably overnight (8-12 hours).
  6. While the pudding sets, wash and chop berries (thaw frozen berries slightly if needed).
  7. To serve, stir the chilled pudding to loosen it, top with berries and optional nuts or yogurt, and enjoy cold.

Notes

Whisking twice is crucial to avoid clumpy texture. Chia seeds absorb liquid, so adjust milk if the pudding is too thick or thin.
