Ingredients
- 1 pound ground beef (80/20 blend recommended)
- 1 medium yellow onion, diced
- 8 oz mushrooms, sliced (cremini or button)
- 4 cloves garlic, minced
- 1 cup beef broth (low-sodium)
- 8 oz wide egg noodles
- 1/2 cup full-fat sour cream
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 teaspoon Dijon mustard
- 1 teaspoon paprika (smoked or regular)
- Salt and black pepper to taste
- Optional: 1/2 cup frozen peas
- Optional: 2 tablespoons fresh parsley, chopped
Instructions
- Prep ingredients: Chop onion, slice mushrooms, and mince garlic. Measure broth and sour cream.
- Brown the beef: Heat a large skillet over medium-high heat. Add ground beef, breaking it up with a wooden spoon. Cook until browned and no pink remains. Remove beef from pan and set aside.
- Sauté veggies: In the same skillet, melt butter. Add onions and mushrooms. Cook for 5-7 minutes until onions are translucent and mushrooms are browned. Add garlic and paprika in the last minute.
- Make the sauce: Sprinkle flour over the veggies and stir for 1 minute. Pour in beef broth and Dijon mustard, stirring to combine. Simmer for 2-3 minutes until slightly thickened.
- Combine and cook noodles: Return beef to the skillet. Add egg noodles and enough water or broth to just cover them (1.5 to 2 cups). Bring to a boil, then reduce heat to medium-low. Cover and simmer for 8-10 minutes until noodles are tender and liquid is absorbed.
- Finish with sour cream: Remove skillet from heat. Stir in sour cream until smooth. Adjust salt and pepper to taste. If too thick, add a splash of milk or broth.
- Serve: Serve immediately topped with fresh parsley and extra black pepper.

Brown the beef well to build flavor. Do not rush the mushrooms; let them brown for caramelization. Always remove the pan from heat before adding sour cream to prevent curdling.
