Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken thighs completely dry with paper towels and season generously with salt and pepper on all sides.
  3. Heat oil in a 12-inch oven-safe skillet over medium-high heat until shimmering.
  4. Place chicken thighs skin-side down in the pan. Do not crowd the pan. Cook undisturbed for 5-6 minutes until skin is golden brown and releases naturally.
  5. Flip chicken and cook other side for 2 minutes. Remove chicken to a plate.

  11. Remove from oven and let rest for 5 minutes.
  12. Squeeze juice of one lemon over the chicken. Taste sauce and adjust seasoning if needed.
