  • 1 bunch (about 1 lb / 450g) fresh asparagus
  • 3 tablespoons honey
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 4 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 lemon (sliced and juiced)
  • Black pepper to taste
  • Cooking spray or additional olive oil for pan

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with aluminum foil or parchment paper and lightly grease.
  2. Wash and dry asparagus. Snap off woody ends and trim if necessary. Toss with a drizzle of olive oil, salt, and pepper. Spread in a single layer on the prepared sheet pan.
  3. In a small bowl, whisk together honey, soy sauce, minced garlic, red pepper flakes, and olive oil until smooth.
  4. Pat salmon fillets dry with paper towels. Place on the sheet pan next to the asparagus. Season the top of the salmon with black pepper.
  5. Spoon or brush the honey garlic glaze generously over the salmon fillets.
  6. Roast for 10-12 minutes, or until salmon is opaque, flakes easily with a fork, and glaze is bubbly and caramelized.
  7. Remove from oven and immediately squeeze fresh lemon juice over the dish. Garnish with lemon slices or sesame seeds if desired. Serve immediately.

Notes

Pat salmon dry before glazing to ensure proper caramelization. Do not crowd the pan to avoid steaming. If using thin asparagus, reduce cook time by 2 minutes. For thicker salmon, add 2 minutes to cook time. Salmon is done at 145°F internal temperature, but pulling at 135°F keeps it juicier.
