  • 4 large yellow onions, sliced into half-moons
  • 24 ounces (1 bottle) crisp lager beer (e.g., German pilsner or American lager)
  • 1 cup (240ml) low-sodium beef broth
  • 2 tablespoons whole grain or Dijon mustard
  • 1 cup sauerkraut, drained
  • 1 teaspoon caraway seeds
  • 1 teaspoon fennel seeds
  • 1 bay leaf
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter

Instructions

  1. Slice the onions into thin half-moons and place them in the bottom of a 6-quart slow cooker. If using sauerkraut, drain it well and layer it over the onions.
  2. Pour in the lager beer and beef broth. Add the caraway seeds, fennel seeds, bay leaf, and black pepper. Stir gently to combine.
  3. Arrange the bratwurst links on top of the onions in a single layer. Press them down gently so they are partially submerged in the liquid.
  4. Cover and cook on LOW for 6-8 hours (or HIGH for 4 hours, though LOW is preferred for texture).
  5. About 30 minutes before serving, stir in the mustard and butter. Taste and adjust seasoning with salt or pepper if needed. Add sauerkraut now if desired.
  6. Optional: Remove brats and sear in a hot skillet with oil for 1-2 minutes per side until browned and crispy.
  7. Serve brats on buns or a platter, spooning the caramelized onions and sauce generously over the top.

Notes

Do not pierce the bratwurst casings to retain moisture. Use a good quality lager for better flavor. The internal temperature of the brats should reach 160°F (71°C). Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
