- 1.5 to 2 pounds raw bratwurst (pork, chicken, or turkey)
- 12 oz lager or pilsner beer
- 2 large yellow onions, thinly sliced
- 4 cloves garlic, minced
- 2 tablespoons unsalted butter
- 2 bay leaves
- 1 teaspoon whole mustard seeds
- 1 tablespoon vegetable oil
- Salt and black pepper to taste
- Optional: Fresh parsley, spicy brown mustard, sliced pickles, or sauerkraut
Instructions
- Slice onions thinly and mince garlic. Measure beer and prepare sausages.
- Heat butter in a large skillet or Dutch oven over medium heat. Add onions and a pinch of salt; cook for 5-7 minutes until soft and translucent.
- Add garlic, bay leaves, and mustard seeds; cook for 1 minute until fragrant.
- Pour in the beer, scraping the bottom of the pan to release browned bits. Bring to a gentle simmer.
- Add bratwurst to the liquid, ensuring they are mostly submerged. Cover and braise for 25-30 minutes, flipping halfway through, until internal temperature reaches 160°F.
- Remove sausages and set aside. Increase heat to medium-high and reduce the onion-beer mixture for 2-3 minutes until slightly thickened.
- Add vegetable oil to the pan. Sear sausages for 1-2 minutes per side until golden brown and crisp.
- Return sausages to the pan, spoon sauce over the top, and serve immediately in toasted buns.
Notes
Do not pierce the sausages with a fork, as this releases juices and causes dryness. Use raw bratwurst for best texture and flavor absorption. If the sauce is too thin, simmer longer or use a cornstarch slurry. Toast buns in butter to prevent sogginess.
