  • 1 package (450g) Phyllo dough or Puff Pastry, thawed
  • 1/2 cup (115g) Unsalted Butter, melted
  • 2 tablespoons Granulated White Sugar
  • 4 medium Apples (mix of Granny Smith and Honeycrisp), peeled, cored, and sliced thin
  • 1/2 cup (100g) Light Brown Sugar
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Pure Vanilla Extract
  • 1 tablespoon Lemon Juice
  • 1/2 cup (50g) Plain Dry Breadcrumbs or Panko

Instructions

  1. Preheat oven to 375°F (190°C) and line a large baking sheet with parchment paper.
  2. In a large bowl, toss sliced apples with lemon juice, brown sugar, cinnamon, vanilla, and breadcrumbs until well coated. Set aside.
  3. If using phyllo, unroll sheets and keep covered with a damp towel to prevent drying. Lay out 3-4 sheets on the counter, overlapping slightly.
  4. Brush each sheet generously with melted butter and sprinkle lightly with granulated sugar. Repeat with another 3-4 sheets to create 6-8 layers total.
  5. Spread the apple filling in a log shape along the long edge of the pastry, leaving a 1-inch border.
  6. Tightly roll the pastry away from you, using the parchment paper to help transfer it to the baking sheet. Pinch seams to seal and tuck in the ends.
  7. Brush the top with more melted butter and sprinkle with extra sugar if desired.
  8. Bake for 30-35 minutes, rotating the pan halfway through, until golden brown and crispy. Cover with foil if browning too quickly.
  9. Let cool for 10 minutes before slicing into 1-inch pieces. Serve warm.

Notes

Keep phyllo dough covered with a damp towel until ready to use to prevent cracking. Use breadcrumbs to absorb apple juices and prevent a soggy bottom. Roll the strudel tightly to keep the filling inside. Cool completely before slicing to allow the filling to set. Can be frozen unbaked for later use.
