Description
A quick, budget-friendly, and healthy 5-ingredient breakfast or snack made with ripe bananas, peanut butter, and oats. These no-bake energy bites are perfect for busy mornings and can be prepped ahead for the week.

- 2 large ripe bananas
- 1/2 cup (120g) peanut butter (creamy or crunchy)
- 1 1/2 cups (150g) old-fashioned rolled oats
- 2 tablespoons (30ml) honey
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract (optional)
- 1/4 cup (40g) mini chocolate chips (optional)
- 1 tablespoon chia seeds or flaxseed (optional)
Instructions
- Peel the bananas and mash them in a large mixing bowl until completely smooth.
- Add the peanut butter and honey to the mashed bananas and stir well until combined into a thick paste.
- Add the rolled oats, salt, and vanilla extract (if using). Stir until the oats are fully coated and the mixture is uniform.
- If adding chocolate chips or chia seeds, fold them in now.
- If the mixture is too sticky, chill the bowl in the fridge for 15-20 minutes.
- Line a baking sheet with parchment paper.
- Scoop out about 1 tablespoon of mixture and roll it into a ball between your palms. If it sticks, wet your hands slightly with water.
- Place the balls on the prepared baking sheet.
- Freeze the bites for at least 30 minutes to firm them up.
- Store in an airtight container in the fridge for up to 1 week or freezer for up to 3 months.
Notes
Use very ripe, spotty brown bananas for natural sweetness. If the mixture is too wet, add more oats; if too dry, add more honey or a splash of milk. Wet your hands with water if the mixture sticks while rolling. These freeze beautifully and thaw quickly at room temperature.
