Description
A forgiving, juicy one-pan weeknight dinner featuring crispy skin-on chicken thighs and roasted Brussels sprouts in a sweet and savory maple Dijon glaze.

- 2 lbs bone-in, skin-on chicken thighs
- 1/2 cup real maple syrup
- 2 tablespoons Dijon mustard
- 1 tablespoon soy sauce (low-sodium recommended)
- 4 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 pound Brussels sprouts, trimmed and halved
- Salt and black pepper to taste
Instructions
- Pat chicken thighs dry with paper towels and season generously with salt and pepper on both sides.
- Heat a large cast iron skillet over medium-high heat with 1 tablespoon of oil. Place chicken skin-side down and sear for 4-5 minutes until golden brown and crispy. Flip and cook for another 3-4 minutes. Remove chicken from pan and set aside.
- Reduce heat to medium. Add halved Brussels sprouts to the same skillet and sauté for 5 minutes until they start to brown.
- In a small bowl, whisk together maple syrup, Dijon mustard, soy sauce, and minced garlic until smooth.
- Return chicken to the skillet skin-side up. Pour the sauce over the chicken and around the sprouts. Add butter.
- Reduce heat to medium-low, cover with a lid or foil, and simmer for 10-12 minutes until chicken reaches an internal temperature of 165°F (74°C).
- Remove lid. If sauce is too thin, simmer uncovered for 2 more minutes. Spoon glaze over chicken and sprouts. Garnish with fresh herbs if desired and serve immediately.
Notes
Use real maple syrup, not pancake syrup. Bone-in, skin-on thighs are recommended for juiciness and crispy skin. If using a sheet pan, roast sprouts at 400°F (200°C) for 15-20 minutes while searing chicken. Do not freeze as Brussels sprouts become watery upon thawing.
