  • 2 medium yellow potatoes (Yukon Gold), diced into ½-inch cubes
  • 6 large eggs
  • 1 cup sharp cheddar cheese, shredded
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 8 large flour tortillas (10-inch)
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 tablespoon oil (for potatoes)
  • Optional: Sautéed bell peppers, black beans, or fresh cilantro

Instructions

  1. Dice potatoes into ½-inch cubes. Toss with oil, salt, and pepper. Roast at 400°F (200°C) for 20 minutes until crispy, or pan-fry until browned. Let cool completely.
  2. In a large skillet over medium heat, cook chorizo, breaking it up with a spatula. Once browned, add diced onion and cook for 2-3 minutes until soft. Add garlic in the last 30 seconds. Remove from heat and let cool slightly.
  3. Wipe out skillet if necessary. Whisk eggs with salt, pepper, and cumin. Pour into warm skillet and scramble gently until soft curds form but still slightly undercooked. Remove from heat.
  4. Mix cooled potatoes and chorizo mixture into the eggs. Fold in shredded cheese. Ensure the filling is cool to the touch.
  5. Warm tortillas for 10-15 seconds in microwave or dry skillet to make them pliable.
  6. Place a tortilla flat. Scoop ¾ cup of filling into the center, leaving a 2-inch border. Fold bottom up, fold in sides, and roll tightly away from you.
  7. Wrap each burrito tightly in plastic wrap, then place in a heavy-duty freezer bag or wrap in foil. Label with date. Freeze for up to 3 months.
  8. To reheat, remove plastic wrap, wrap in a paper towel, and microwave on high for 1-2 minutes. Let sit for 1 minute before eating.

Notes

Ensure all filling ingredients are completely cooled before wrapping to prevent condensation and soggy tortillas. Do not overfill the burritos to avoid tearing during freezing. For best texture, reheat with a paper towel to absorb excess moisture.
