Instructions
- Thaw frozen peaches and drain them in a colander for at least 15 minutes to remove excess liquid.
- In a large bowl, combine drained peaches, 1 cup sugar, lemon juice, cornstarch, cinnamon, nutmeg, and bourbon. Toss to coat evenly.
- Pour the peach mixture into a 9×13-inch baking dish and spread evenly.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate small bowl, combine melted butter, 1/2 cup sugar, and milk.
- Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
- Drop spoonfuls of the topping over the peach mixture, leaving some gaps.
- Bake in a preheated 375°F (190°C) oven for 45-50 minutes, until topping is golden and filling is bubbling.
- Let cool for at least 15 minutes before serving to allow filling to thicken.
