A fast, budget-friendly, and keto-friendly weeknight dinner featuring juicy pork chops seared in olive oil and finished with a rich garlic butter herb pan sauce.

- 4 pork chops (about 1 inch thick, bone-in or boneless)
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 6 cloves garlic, minced
- 2 tablespoons fresh herbs, chopped (thyme and rosemary) OR 1 tablespoon dried herbs
- 1/2 cup chicken broth (low-sodium)
- 1 teaspoon Dijon mustard
- Salt and black pepper, to taste
- Fresh parsley or chives for garnish (optional)
Instructions
- Pat pork chops dry with paper towels and season generously with salt and pepper on both sides. Let them sit at room temperature for 10-15 minutes.
- Heat olive oil in a cast iron or stainless steel skillet over medium-high heat until shimmering.
- Sear pork chops for 3-4 minutes per side until golden brown and internal temperature reaches 145°F. Remove chops to a plate and tent with foil.
- Reduce heat to medium-low. Add butter to the skillet. Once melted and foaming, add minced garlic and fresh herbs. Stir constantly for 1-2 minutes until garlic is golden but not burnt.
- Whisk chicken broth and Dijon mustard in a small bowl. Pour into the skillet, scraping up brown bits from the bottom.
- Simmer sauce for 2-3 minutes until slightly thickened.
- Return pork chops to the skillet and spoon sauce over them for 1 minute to reheat and baste.
- Serve immediately, drizzling extra sauce over the top and garnishing with fresh herbs if desired.
Notes
Do not skip resting the pork chops for 5 minutes after cooking to retain juices. If the sauce is too thin, simmer longer or add a cornstarch slurry. If chops are dry, ensure you pull them off heat at 140°F as they will rise to 145°F while resting.
