Description
A quick, restaurant-quality keto dinner featuring seared ribeye steak bites in a rich, creamy garlic butter sauce. Ready in just 15 minutes with simple pantry ingredients.
Ingredients
Scale
- 1.5 lbs ribeye steak, cut into 1-inch cubes
- 3 tablespoons unsalted butter
- 6–8 cloves garlic, minced
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- 2 tablespoons dry white wine (optional)
- 1 teaspoon fresh thyme or rosemary, chopped
- Salt and black pepper to taste
- 2 stalks green onions, sliced (for garnish)
Instructions
- Pat the steak bites dry with paper towels and season generously with salt and pepper.
- Heat a cast iron skillet over medium-high heat and add 1 tablespoon of butter.
- Sear the steak bites in a single layer for 2-3 minutes per side until browned and medium-rare. Remove steak and set aside.
- Reduce heat to medium and add another tablespoon of butter to the pan.
- Add minced garlic and fresh herbs; sauté for 1 minute without burning.
- Pour in white wine (or beef broth) to deglaze the pan, scraping up brown bits. Simmer for 1 minute.
- Reduce heat to low, add heavy cream, and simmer for 2-3 minutes until slightly thickened.
- Remove pan from heat and stir in Parmesan cheese until smooth.
- Return steak bites to the pan, toss to coat in sauce, and let sit for 1 minute.
- Serve immediately, garnished with sliced green onions.
Notes
Do not overcrowd the pan when searing steak to ensure a good crust. Keep heat low when adding cream and cheese to prevent the sauce from breaking. This recipe is naturally gluten-free. Do not freeze leftovers as the dairy sauce may separate.
