These budget-friendly keto cream cheese egg bites are a cheap, easy meal prep solution that tastes like a savory cheesecake. They are low-carb, high-protein, and perfect for busy mornings.

- 6 large eggs
- 4 ounces (115g) full-fat brick cream cheese, softened
- 2 tablespoons heavy cream
- 1 cup (100g) sharp cheddar cheese, shredded
- 6 slices bacon, cooked and crumbled
- 1 cup fresh spinach, packed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- Black pepper to taste
- Red pepper flakes (optional)
- Cooking spray
Instructions
- Preheat oven to 350°F (175°C). Place 12-cup silicone muffin cups into a standard metal muffin tin and lightly spray with cooking spray.
- In a blender or mixing bowl, combine eggs, softened cream cheese, heavy cream, garlic powder, salt, and pepper. Blend or whisk vigorously until completely smooth with no lumps.
- Pour the egg mixture into a measuring cup with a spout for easy pouring.
- Divide the egg mixture evenly among the 12 silicone cups, filling each about 3/4 full.
- Sprinkle each cup with shredded cheddar cheese, crumbled bacon, and a pinch of spinach.
- Bake in the center of the oven for 18-20 minutes, until puffed and set but still having a slight jiggle in the center.
- Let cool in the pan for 5 minutes, then gently pop out of the silicone cups.
Notes
Ensure cream cheese is softened to avoid lumps. Do not overbake or they will become rubbery. Can be frozen for up to 2 months; thaw in fridge and microwave for 30 seconds to reheat.
