Keto Chocolate Peanut Butter Fat Bombs: 5-Ingredient Meal Prep

  • Author: Olivia
  • Total Time: 35 minutes
  • Yield: 12 servings 1x

Description

These keto chocolate peanut butter fat bombs are a quick, budget-friendly, and kid-approved low-carb snack that requires only 15 minutes of active prep time. They serve as a perfect sweet treat for meal prep, keeping hunger pangs away without spiking blood sugar.

Ingredients

Scale
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup creamy peanut butter
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered low-carb sweetener (e.g., erythritol or monk fruit blend)
  • 1 cup dark chocolate chips (85% cocoa or sugar-free)
  • 1 tablespoon coconut oil
  • 1/4 cup crushed peanuts (optional)
  • Sea salt flakes (optional)

Instructions

  1. Prep workspace: Ensure silicone molds are clean and dry. Soften butter if needed.
  2. Make the center: In a small mixing bowl, whisk together softened butter, peanut butter, heavy cream, vanilla extract, and powdered sweetener until smooth and creamy.
  3. Fill molds: Spoon the peanut butter mixture into silicone molds or muffin liners, filling them halfway. Smooth the tops.
  4. Freeze center: Place the tray in the freezer for 10 minutes to firm up the peanut butter centers.
  5. Melt chocolate: While centers freeze, melt dark chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
  6. Coat centers: Remove molds from freezer. Spoon melted chocolate over the firm centers to cover completely. Sprinkle with sea salt flakes if desired.
  7. Freeze until set: Return to freezer for 15-20 minutes until the chocolate is hard.
  8. Store: Pop fat bombs out of molds and store in an airtight container in the freezer for up to 3 months.

Notes

Use powdered sweetener to avoid grittiness. Do not overheat chocolate or it will seize. Keep centers soft with heavy cream. Store in freezer, not fridge, to prevent sweating. Can be made dairy-free by swapping butter/cream for coconut alternatives.
