- 4 ounces (115g) high-quality dark chocolate (70% cocoa), chopped
- 4 tablespoons (57g) unsalted butter
- 2 large eggs, room temperature
- ¼ cup (28g) fine, blanched almond flour
- 2 tablespoons (25g) granulated erythritol or monk fruit sweetener
- Pinch of sea salt
- Butter and cocoa powder (optional, for greasing and dusting ramekins)
- Heavy cream or vanilla ice cream (optional, for serving)
Instructions
- Preheat oven to 400°F (200°C). Butter the inside of four 6-ounce ramekins thoroughly. Optionally, dust with cocoa powder by tilting the ramekins and tapping out excess.
- Chop dark chocolate into small pieces. Place in a microwave-safe bowl with butter. Microwave in 30-second intervals, stirring between each, until smooth. Set aside to cool slightly.
- In a medium bowl, vigorously whisk eggs and sweetener for 1-2 minutes until pale and fluffy.
- Pour the melted chocolate mixture into the egg mixture and stir gently with a spatula until combined.
- Add almond flour and a pinch of salt. Fold gently until just incorporated. Do not overmix.
- Divide batter evenly among the prepared ramekins, filling them about ¾ full.
- Place ramekins on a baking sheet and bake for 12-14 minutes. Edges should be set and puffed, but centers should still look soft and jiggly.
- Let cakes cool for 1-2 minutes. Run a knife around the edge to loosen, then invert onto plates.
- Serve immediately, topped with ice cream or whipped cream if desired.
Notes
The center should jiggle like gelatin, not water. If it is liquidy, it is underbaked; if solid, it is overbaked. Do not skip the resting time after baking to allow structure to firm up. For make-ahead, fill ramekins and refrigerate for up to 24 hours, adding 1-2 minutes to baking time. Do not freeze.
