  • 1/2 cup (120ml) heavy cream, cold
  • 2 tablespoons (30ml) whole milk
  • 1/2 teaspoon salt (for foam)
  • 1 teaspoon vanilla extract
  • 34 tablespoons caramel sauce
  • 2 tablespoons brown sugar (optional, for homemade caramel)

Instructions

  1. Melt butter in a small saucepan over medium heat, stirring constantly until it foams, settles, and turns amber with a nutty aroma (5-7 minutes).
  2. Remove from heat, stir in a pinch of sea salt, and set aside to cool slightly.
  3. Prepare the coffee base by pouring cold brew concentrate or cooled espresso into a glass.
  4. In a small bowl, combine cold heavy cream, milk, vanilla extract, and salt.
  5. Whip the cream mixture using a handheld frother or French press until soft peaks form.
  6. Fill a tall glass with ice and pour the cold coffee over the ice.
  7. Drizzle caramel sauce into the glass and swirl to coat.
  8. Gently pour the whipped cold foam over the back of a spoon onto the coffee surface.
  9. Spoon the liquid brown butter over the foam and sprinkle the brown butter solids on top.

Notes

Ensure all ingredients for the foam are very cold to ensure proper whipping. Do not burn the butter; remove from heat as soon as it smells nutty and turns amber.
