Instructions

  1. Preheat oven to 400°F (200°C). Line a 18×13 inch baking sheet with parchment paper.
  2. Place sweet potato cubes in a large bowl. Toss with olive oil, salt, and black pepper until evenly coated.
  3. Spread sweet potatoes in a single layer on the baking sheet, ensuring they are not overcrowded.
  4. Roast for 25 minutes, flipping halfway through, until tender and caramelized on the edges.
  5. While potatoes roast, whisk together honey, melted butter, fresh cinnamon, and vanilla extract in a small bowl until smooth.
  6. Remove baking sheet from oven. Drizzle the glaze over the hot potatoes and toss gently to coat evenly.
  7. Return to oven for 5 more minutes to allow the glaze to caramelize.
  8. Remove from oven. Sprinkle with toasted pecans and fresh parsley if using. Serve warm.
