A quick, skillet-seared meatloaf with a sticky sweet-savory honey garlic glaze. This recipe is faster than traditional oven-baked versions, yielding juicy, flavorful patties ready in under 30 minutes.

- ½ cup plain dried breadcrumbs
- ¼ cup whole milk
- 1 large egg
- 1 small yellow onion, finely diced

- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried parsley
- 1 teaspoon salt
- 1 teaspoon black pepper
- ½ cup honey
- ¼ cup soy sauce (low-sodium recommended)
- 2 tablespoons rice vinegar
- 1 teaspoon garlic powder
- ½ teaspoon ginger powder
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch
- 2 tablespoons water
- 2–3 stalks green onions, sliced (for garnish)
- 1 tablespoon olive oil or vegetable oil (for searing)
Instructions
- In a large mixing bowl, combine breadcrumbs and milk. Let sit for 1 minute to absorb.
- Add ground beef, ground pork, egg, diced onion, minced garlic, Worcestershire sauce, dried parsley, salt, and pepper to the bowl.
- Gently mix ingredients by hand until just combined. Do not overmix.
- Divide mixture into two equal portions and shape each into a flattened log or oval loaf, about 8 inches long.
- In a small bowl, whisk together honey, soy sauce, rice vinegar, garlic powder, ginger powder, sesame oil, cornstarch, and water until smooth.
- Heat a large skillet (preferably cast iron) over medium-high heat with 1 tablespoon of oil.
- Place meatloaves in the skillet and sear for 4-5 minutes per side until browned. Do not cook through yet.
- Reduce heat to medium-low. Pour glaze over the meatloaves and brush generously over tops and sides.
- Simmer for 2-3 minutes, then flip loaves, brush the other side with glaze, and cook for another 2-3 minutes.
- Cook until internal temperature reaches 160°F (71°C) and glaze is caramelized.
- Remove from heat and let rest for 5 minutes before slicing.
- Garnish with sliced green onions and serve.
