- 2 tablespoons extra virgin olive oil
- ½ cup balsamic vinegar
- ¼ cup honey
- 4 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- Optional: cherry tomatoes or sliced shallots
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a medium bowl, whisk together balsamic vinegar, honey, Dijon mustard, minced garlic, dried thyme, salt, and pepper until smooth.
- Pat chicken thighs dry with paper towels to ensure crispy skin. Place on the prepared baking sheet.
- Pour the sauce over the chicken and use tongs to toss each piece until evenly coated.
- Roast for 20-25 minutes, or until the internal temperature reaches 165°F and the skin is golden and crispy. Optionally broil for the last 2-3 minutes for extra caramelization.
- Remove from oven and let rest for 5 minutes. Spoon remaining pan juices over the chicken before serving.
Notes
Dry the chicken skin thoroughly for maximum crispiness. If using boneless thighs, reduce cooking time by 5-7 minutes. Do not crowd the pan to prevent steaming. The sauce can be reduced in a saucepan for a thicker drizzle.
