  • 1 cup plain, unsweetened Greek yogurt (full-fat or 2%)
  • 2 tablespoons mayonnaise
  • 1 cup red seedless grapes, halved
  • 2 stalks celery, finely diced
  • 1/4 cup red onion, finely diced
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup chopped walnuts or pecans
  • Optional: 1 small Granny Smith apple, diced

Instructions

  1. Shred the rotisserie chicken using two forks or your hands into bite-sized pieces and place in a large mixing bowl.
  2. Wash and dry the grapes, then halve them. Finely dice the celery and red onion. If using red onion, soak it in cold water for 5 minutes to reduce sharpness, then drain.
  3. Add the grapes, celery, and onion to the bowl with the chicken.
  4. In a small bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, dried dill, salt, and pepper until smooth and lump-free.
  5. Pour the dressing over the chicken and vegetable mixture. Gently fold everything together with a large spoon or spatula until evenly coated. Avoid stirring vigorously to prevent mashing the grapes.
  6. Taste and adjust seasoning with more salt, pepper, or lemon juice if needed.
  7. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld before serving.

Notes

If your Greek yogurt is runny, strain it through a cheesecloth or fine-mesh sieve for 15 minutes before using to prevent a watery salad. Toast nuts in a dry pan for 2-3 minutes if adding them for extra flavor. This salad does not freeze well as the yogurt separates and grapes become mushy; store in the refrigerator for up to 5 days.
