- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
Instructions
- Mash the cottage cheese in a mason jar or container using a fork or whisk until the curds are broken down and smooth.
- Add the rolled oats and chia seeds to the jar and stir into the mashed cottage cheese to ensure no dry clumps remain.
- Pour in the milk, honey (or maple syrup), vanilla extract, and cinnamon. Stir vigorously until the mixture is uniform and creamy.
- Secure the lid on the jar and shake well, or stir one more time. Place in the refrigerator for at least 4 hours, ideally overnight (8-12 hours).
- In the morning, remove the jar from the fridge and stir well. If the mixture is too thick, add a splash of milk and stir.
- Top with mixed berries and eat immediately with a spoon.
Notes
Mashing the cottage cheese is crucial for a smooth texture. Use old-fashioned rolled oats, not instant or steel-cut. The base can be stored in the fridge for up to 5 days; add fresh berries in the morning to prevent sogginess. Do not freeze as the texture will become mushy.
