A moist, fluffy, and high-protein breakfast that tastes like a cross between cheesecake and an oatmeal cookie. Naturally gluten-free and packed with protein to keep you full until lunch.

- 1 cup (225g) cottage cheese (full-fat recommended)
- 1 cup (80g) rolled oats or old-fashioned oats
- 2 large eggs
- ½ cup (120ml) milk (dairy or non-dairy like almond/oat)
- 2–3 tablespoons pure maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup (75g) wild blueberries (fresh or frozen)
Instructions
- Preheat oven to 350°F (175°C) and grease a 6-inch square baking dish or ramekins with butter or cooking spray.
- Add cottage cheese, eggs, milk, maple syrup, vanilla extract, and cinnamon to a blender. Blend on high until completely smooth with no lumps.
- Add oats, baking powder, and salt to the blender. Pulse a few times until oats are broken down but still have some texture. The batter should be thick and pourable.
- Pour batter into the prepared baking dish. Gently fold in the blueberries (and any optional mix-ins like chia seeds or protein powder).
- Bake for 25-30 minutes for a 6-inch dish, or 15-20 minutes for ramekins, until edges are golden brown and the center is set but slightly jiggly.
- Let cool for 5 minutes before serving. Slice into wedges or eat from ramekins. Top with extra blueberries, maple syrup, or Greek yogurt if desired.
Notes
Blend cottage cheese until silky smooth for best texture. Do not overbake as oats continue to cook while cooling. Can be made ahead by blending batter the night before. For dairy-free, use dairy-free cottage cheese and almond milk. For gluten-free, ensure oats are certified GF.
