Herbed Turkey Pinwheels: 1-Person Budget Lunch

  • Author: Olivia
  • Total Time: 45 minutes
  • Yield: 8 servings 1x

Description

A quick, budget-friendly, and delicious cold lunch hack that costs around $1.50-$2.00 per serving. These herbed turkey pinwheels are easy to assemble, hold together well, and taste great straight from the fridge.

Ingredients

Scale
  • 68 oz sliced turkey breast (thinly sliced)
  • 8 oz soft cream cheese (full-fat, softened)
  • 2 tablespoons fresh herbs (chives, dill, and parsley, finely minced)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup shredded lettuce (Iceberg or romaine, patted dry)
  • 1/2 cup shredded cheddar or Swiss cheese
  • Flour tortillas (6-inch or 8-inch, approx. 200g total)
  • 1 tablespoon butter, melted (optional, for brushing)

Instructions

  1. Chop fresh herbs finely and shred cheese if using a block. Set aside.
  2. In a small bowl, mix softened cream cheese, minced herbs, garlic powder, black pepper, and red pepper flakes until smooth and evenly green.
  3. Lay tortillas flat on a cutting board. If using large tortillas, cut in half.
  4. Spread a thin, even layer of the herb cream cheese mixture over each tortilla, leaving a 1/2-inch border.
  5. Layer sliced turkey breast over the cream cheese, overlapping slices slightly.
  6. Sprinkle shredded cheese evenly over the turkey, then scatter shredded lettuce on top.
  7. Starting from one long edge, roll the tortilla up tightly, tucking in the filling as you go.
  8. Wrap each roll tightly in plastic wrap or parchment paper.
  9. Refrigerate for at least 30 minutes to firm up the filling.
  10. Unwrap and slice into 1-inch pinwheels using a sharp knife.
  11. Serve cold or brush with melted butter and broil for 2 minutes for a golden finish.

Notes

Ensure lettuce is completely dry to prevent soggy pinwheels. Do not skip the chilling step, as it is crucial for clean slicing. Turkey and cream cheese can be bought in bulk to reduce cost. Pinwheels can be frozen for up to 3 months.
