  • 1 can (8-12 oz) refrigerated plain biscuit dough
  • 4 oz (113g) full-fat cream cheese, softened
  • 1 cup (100g) shredded mild cheddar cheese
  • 46 medium fresh jalapenos, halved and seeded
  • 1 egg, beaten (for egg wash, optional)
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons cooked bacon bits (optional)
  • Green food coloring (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix the softened cream cheese, minced jalapenos, garlic powder, salt, pepper, and optional bacon bits or food coloring.
  3. Separate the biscuit dough into individual biscuits and flatten each slightly.
  4. Place a teaspoon of the cheese mixture in the center of each flattened biscuit.
  5. Top with another flattened piece of dough and press edges to seal.
  6. Roll small pieces of dough into thin snakes and wrap them around the poppers to create a ‘mummy’ look, leaving gaps for eyes.
  7. Place mummies on the baking sheet and brush with egg wash if using.
  8. Bake for 12-15 minutes until the dough is golden brown and puffed.
  9. Let cool for 5 minutes before serving warm with ranch or sour cream.

Notes

Wear gloves when handling jalapenos to avoid skin irritation. Ensure edges are sealed well to prevent cheese leakage. Can be assembled up to 24 hours in advance and refrigerated, or frozen unbaked for up to 2 months.
