Description

  • 1 cup (226g) unsalted butter, softened to room temperature
  • 1 cup (200g) brown sugar, packed
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 ½ cups (315g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups (340g) semi-sweet chocolate chunks
  • 1 cup (170g) dark chocolate chips or chunks (70% or higher)
  • 1 cup (170g) white chocolate chips or chunks
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C). Line the bottom of a 12-inch springform pan with parchment paper and lightly spray sides with non-stick spray.
  2. In a large bowl, beat softened butter, brown sugar, and granulated sugar on medium-high speed for 3-4 minutes until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Scrape down bowl sides. Add vanilla extract and mix until combined.
  4. In a separate medium bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients on low speed, mixing only until just combined. Do not overmix.
  6. Gently fold in semi-sweet chocolate chunks until evenly distributed.
  7. Transfer dough to prepared pan. Press evenly to edges. Bake for 20-25 minutes until edges are golden brown and center is set but slightly soft.
  8. Cool in pan for 10 minutes, then remove from pan and cool completely on a wire rack (at least 1 hour, preferably 2).
  9. While cookie cools, melt dark chocolate and white chocolate separately in microwave intervals. Stir vegetable oil into melted white chocolate.
  10. Drizzle melted dark chocolate randomly over cooled cookie cake. Drizzle white chocolate over dark chocolate in opposite direction.
  11. Drag a toothpick from center outward to create radial lines, then drag in a spiral pattern to create web design.
  12. Let chocolate set completely at room temperature or in fridge for 15 minutes before serving.

Notes

The cookie cake must be completely cool before decorating to prevent the chocolate from melting. Adding vegetable oil to the white chocolate makes it more fluid and glossy for easier piping. For clean slices, chill the cake for 30 minutes before cutting.
